Welcome to the Wolff Den!

I've never been a blogger, but decided to give it a shot after several people suggested that I start a blog to share some of the things that compose the uniqueness of my life. After marrying my other half, Kevin Wolff, on October 10, 2014, I decided this would be the best time to start! Please excuse the inevitable content and layout shuffling as I slowwwwly figure out how this thing works. ;)

Mom's Granola

INGREDIENTS:
  • 3 cups old fashioned rolled oats
  • 2 cups slivered almonds (OR 1 cup cashews and 1 cup slivered almonds)
  • 3/4 cup shredded coconut
  • 1/4 cup oil
  • 1/4 plus 2 T dark brown sugar
  • 1/4 cup pure maple syrup
  • 1/2 t salt (optional)
  • 1/2 cup ground flax seed (optional)
DIRECTIONS:
Mix together old fashioned rolled oats, slivered almonds and shredded coconut.
Add oil, dark brown sugar, pure maple syrup and optional ingredients.
Place on a cookie sheet.
Bake at 400 degrees turning over after the first 10 minutes then every 5 minutes or less until all the morsels are golden brown.  
Let cool.

Mississippi Roast

INGREDIENTS:
  • Chuck roast (choose one with plenty of marbling for best results)
  • 1 packet of Hidden Valley ranch dressing powder mix
  • 1 packet of Au Jus powder mix
  • 1 stick of salted butter
  • 5 pepperoncini peppers*


DIRECTIONS:
Put chuck roast in crock pot,
Melt butter and add both mix packets (Hidden Valley ranch dressing &Au Jus mix)
Pour mixture over the roast
Add 5 pepperoncini peppers*
DO NOT ADD WATER.

Cook on low for 7-8 hrs
*I've made this replacing the pepperoncini peppers with about 10-15 black peppercorns (the little balls) and it turns out fantastic!

Betty Jane's Chocolate Chip Cookies

Step 1 
Mix until creamy:
  • 2/3 cup liquid shortening (Crisco) I used Canola
  • ¾ of a tub soft margarine (Parkay) (I used 1 ½ sticks butter)
  • 1 cup sugar
  • 1 cup dark brown sugar
  • 2 eggs
  • 2 T. vanilla

Step 2
Add, blend and mix well:
  • 4 cups flour
  • 1 tsp baking soda
  • 1 tsp salt

Step 3
Add:
  • 2-12oz Nestle Semi-sweet morsels

Preheat 375
Bake on ungreased cookie sheet for 10 minutes. Let stand for 5 minutes.
